Creating a Positive World with Espresso

Australians as well as the rest of world are in the midst of a cultural renaissance. In the Post War Period we found ourselves living on pre-ground instant coffee, canned foods and all that was processed.

Nowadays there is a clear shift toward everything that is fresh: freshly roasted, freshly baked, freshly cooked and old world ideals where small is beautiful and freshness once again influences the quality of what we eat and drink.

Organic and healthy foods are leading the charge as to the way we humans lead our lives in a developed world. And we are willing to pay for it to make up for the true cost of living in an industrialized world for so long.

The true cost being pollution to our environment and where poor families on farms support big business.

Contrary to the marketing driven companies who deploy their deceptive image-making, it is our care and passion that is pitted against these techniques and our philosophy is to contribute to all that is true, fresh and fair in this world.

Through espresso we find ourselves staying true to the path of expertise and the result is in the liquid nectar. Our discovery that the creation of "caffe espresso" is a very delicate and exacting culinary art represents the ultimate culmination of capturing the sweet nectar through care and persistence. Of all the fresh cuisines, espresso stays true to its purpose because nothing is as good to the taste buds as GREAT ESPRESSO.

In other words, it is the perfect analogy where caring and persistence in a process can make a difference. To those you see on a daily basis (our daily customers), to those who grow it and interact with it naturally (our pricing reflects contributions to those farmers and their families who grow coffee in a fair traded cooperative) and proper environmental recycling so we can account for waste and its proper re-use. (keeping our environment clean)

And to live a life as you would every espresso shot, moment by moment, you savour the little luxuries this world has to offer and by sharing it, we can create one community at a time and that’s what we call an Espresso Culture.

I swear always to treat my coffee beans with love, care and tenderness, appreciating that this will bring out the true flavours and aromas that make the world worth living in.

I swear always to make great espresso’s and have fun at all times.

I will always pack and tamp my grind with passion, extract my shots for 25 seconds and stay true to the traditions of my chosen art, ignoring the myths and legends of those who pretend to know.

I promise to wipe my steaming wands after every use and never abuse milk in any way.

In the face of overwhelming crowds or early morning customers, I will smile sweetly and produce fine espressos in the number demanded.

Above all, I promise to uphold the profession and will accept the mantle of Mr Espresso Barista, preparer of ultimate espresso with the grace and humility borne of countless hours of dedication, perfect cremas and silky milk.
